If chocolate crinkle cookies make you happy…then put the happi in your gut with these happiGut™️ chocolate crinkle cookies. Easily add a boost of fibre, because Santa deserves a happiGut™️ too!
Ingredients:
1/2 cup coconut oil, room temperature
1 egg
1 teaspoon vanilla
1/2 cup of coconut sugar
1 cup cacao powder
1/2 teaspoon baking soda
1/2 teaspoon of kosher salt, himalayan or andean pink salt
1 cup of chocolate chips or 1/2 cup of dark chocolate chips and 1/2 cup of cacao nibs
Coconut sugar combined with arrowroot starch to sprinkle (or just icing sugar, if you wish)
1 tablespoon happiGut™️ fibre
Method:
Preheat and set oven to 350 °F
Mix the room temperature coconut oil and sugar until well blended and not lumpy
Add in the egg and vanilla and mix well
Blend in dry ingredients: cacao powder, baking soda, and salt
Add in chocolate chips or cacao nibs
the mixture will be binding, make small cookie sized round balls and lay on oven tray
Bake at 350°F for approximately 9-10 minutes depending on your oven
Set on cooking rack and let it sit for 10 minutes, outer edge may be firm and slightly crisp and inside should be gooey
Optional: dust with sugar as recommended
Enjoy with your favourite warm beverage, or leave out for Santa!
